BC Summer Salad

1 package of spring greens/mix
1 cup blueberries
1 cup strawberries, diced
1 cup rinsed and cooked pinto beans (or beans of your choice)
1 medium sized cucumber, diced
1 medium sized field tomato (or a handful of cherry tomatoes), diced
1 cup feta cheese (or crumbled/shredded cheese of your choice)
2 tbsp sunflower seeds (or seeds of your choice)
1/2 cup olive oil (can be virgin or extra virgin)
1/4 cup balsamic vinegar (or a vinegar of your choice)
1 large lemon juiced
2 tsp honey
1 tsp salt
1 tsp pepper
Directions
1. Toss the Spring greens/mix, blueberries, diced strawberries, beans, diced cucumber, diced tomato, feta cheese, and sunflower seeds together in a large bowl
2. Combine olive oil, vinegar, lemon juice, honey, salt, and pepper in a jar with a lid. Close tightly and shake well until fully mixed. Drizzle over salad and enjoy!
